Eggman Rice Cake

Serves 8-10. You will need:

  • 1 Eggman Egg Separator
  • 200g Caster sugar
  • 1.7 Litres milk
  • 5 Eggs
  • 40ml Orange liqueur
  • 1 Vanilla pod
  • 40g Rasins
  • 300g Arborio rice
  • Rind of ½ lemon
  • Zest of an orange (grated)

Pre-heat over to 180C. Place the sugar, lemon rind, milk and vanilla pod in a pan and bring to boil. Once boiling add the rice and simmer for 20 min. Remove the pan off the heat and cool. Once cool remove the lemon rind. Using the Eggman separate the egg yolks from the whites. In one bowl whisk the egg yolks with the liquor. In a different bowl whisk the whites until peaking and firm. Pour the egg yolk mixture into the pan and the add the egg white mixture, raisin and orange zest. Fold mixture gently, pour into a cake tin and bake for one hour.
